Fertility Foods: Split Pea and Short Rib Soup


Craving a hearty soup that is deceivingly easy to make? Try this Split Pea and Short Rib Soup! Impress your guests (or just your own belly) with this healthy, high-fiber, high-protein meal.

Now, don't be intimidated by "short rib" feature... it's actually the easiest part! Check out this video recipe hosted by Deb Reichentahl, RMA of Connecticut's Practice Engagement Specialist. She loves a good soup and suggests making this on a Sunday and enjoying all week long!


Split Pea and Short Rib Soup

Makes 8 bowls

2 boxes split pea soup mix (including seasoning packets)

1 vidalia onion, diced

4 carrots, peeled and diced

16 oz butternut squash, chopped

2 lbs bone-in short rib



Combine all ingredients in a large stock pot.

Cover with cold water.

Bring to boil. Once boiling, reduce heat and simmer for 4 hours.

Shred the short rib meat from the bone.

Serve and enjoy! Also good to freeze for later!
